Bodegas del Rosario
Since Roman occupation we have found in Bullas elements related to the winemaking tradition.
The most significant fact about the intense wine production in Bullas is provided by the large amount of traditional wineries found and still preserved, both in urban and rural areas.
The concentration is so important that almost every house in the old part of town treasures ancient remains of wineries, some of which are still in perfectly-preserved conditions and have more than 300 years old.
Along the twentieth century, Bullas gained the official recognition for the quality and singularity of its wines throughout the Region with the establishment of Bullas Wine Appellation.
In the first stages of the Designation of Origin Bullas, Bodegas del Rosario became the only cellar registered in the Control Board. Whereas the rest of the cellars in the area did not take an interest of the issue, the cooperative became an active part in obtaining the designation which was an opportunity to improve the quality of wines and, therefore, the image of wine-making in the region.
Currently, BODEGAS DEL ROSARIO is the main cellar of the D.O. Bullas, exporting over 95% of the total amount exported of this D.O.
Bodegas del Rosario has an Nave de Crianza (ageing room), which is perfectly adapted to the stage of wood ripening of wines, and it has 600 casks where the main processes take place in order to increase their complexity: natural clarification, transfer of the wood compounds and slow micro-oxygenation. The main tools we use for the ageing process are three: use of American and French oak casks, use of casks with different capacity and, finally, a balanced use of the age of the casks ranging from young woods to five-year-old woods maximum.
